Ingredients:
  • 900g diced pork
  • 100g snow peas, halved diagonally
  • 1/4 Chinese cabbage, finely shredded
  • 1 small red capsicum, deseeded, thinly sliced
  • 1 small green capsicum, deseeded, thinly sliced
  • 40.00 ml roasted unsalted peanuts, roughly chopped
  • 125.00 ml fresh coriander leaves
  • 44.80 gm sweet and sour sauce
  • 9.60 gm salt reduced soy sauce
  • 5.20 gm chilli sauce
Instructions:
  • Submerge a dozen 20cm wooden skewers in cold water and let them soak for a minimum of 30 minutes.
  • Prepare the dressing by mixing together the sweet and sour sauce, soy sauce, and chili sauce. Let it sit for later use.
  • Skewer the pork and grill on medium heat for 2 minutes on each side until nicely golden and cooked through.
  • Cook snow peas in boiling water for 1-2 minutes until tender. Drain and shock in ice cold water. Combine with cabbage, bell peppers, peanuts, and coriander in a large bowl. Toss to mix well.
  • Plate the salad individually, layer the skewers on top, and generously drizzle with the dressing before serving.
