Sweet & sour pork

Ingredients:
  • 9.20 gm vegetable oil
  • 500g stir-fry pork strips, heart smart
  • 1/4 Pineapple, peeled, cored, cut into wedges
  • 1 red capsicum, deseeded, sliced
  • 275g pkt sweet and sour stir-fry sauce
  • 125.00 ml fresh coriander leaves
  • 2 x 100g pkts fried noodles
  • Lime wedges, to serve
Instructions:
  • In a sizzling hot frying pan, sear the pork in batches for 3-4 minutes until beautifully browned. Then, transfer to a plate.
  • Toss the pineapple and capsicum in the pan, cooking for 2 minutes.
  • Lower the temperature and mix in the sauce, allowing it to simmer for 5 minutes. Gently fold in the fresh coriander.
  • Serve the noodles in individual bowls, top with sweet and sour pork, and garnish with lime wedges before serving.
