Sweet and sour pork cutlet tray bake recipe

Delight your family with a flavorful Asian-inspired pork cutlet traybake featuring soy sauce, lime, and pineapple.
Ingredients:
  • 270g jar sweet and sour sauce
  • 21.00 gm light soy sauce
  • 42.00 gm lime juice
  • 1 red capsicum, thickly sliced
  • 1 yellow capsicum, thickly sliced
  • 1 red onion, cut into thick wedges
  • 1/2 small pineapple, peeled, cored, cut into 4cm pieces (see notes)
  • 4 pork cutlets, trimmed
  • 450g packet 2 1/2 minutes microwave jasmine rice
  • 1 green onion, thinly sliced
Instructions:
  • Preheat your oven to 200C/180C fan-forced. Grease a large baking tray with sides and line it with baking paper.
  • Mix together the sauces and lime juice in a jug. Spread the capsicum, red onion, and pineapple on a prepared tray. Drizzle 3⁄4 of the sauce mixture over the vegetables and toss to coat. Place the pork on top, brush with the remaining sauce, and bake for 35 minutes, basting occasionally, until the pork is cooked through.
  • Cook jasmine rice according to package instructions.
  • Garnish the pork and rice with fresh green onions, then enjoy the delicious sweet and sour pork with fragrant rice.
