ABC Veggie Bites - a deliciously easy and fun way to enjoy your veggies from the Alpha-Bakery Children’s Cookbook.
Ingredients:
  • 1/3 cup butter or margarine, melted
  • 2 teaspoons water
  • 2 cups fresh vegetables, such as broccoli flowerets or cauliflowerets, 1/4-inch carrot slices, 1/2-inch zucchini slices, 1/2-inch strips green or red bell pepper
  • Grated Parmesan cheese, if desired
Instructions:
  • Preheat the oven to 450°F. Use 1 tablespoon of melted butter to coat the bottom of a 13x9x2-inch rectangular pan.
  • Whisk the egg and water together in one shallow dish. In another shallow dish, combine the flour and salt.
  • Coat a quarter of the vegetables in the egg mixture, then take one piece at a time using a slotted spoon, a fork, or your hands, and roll them in the flour mixture to cover. Transfer to the pan.
  • Continue by repeating the process with the remaining vegetables. Drizzle the remaining butter lovingly over each vegetable piece and into the pan.
  • Bake without cover for 10-12 minutes, flipping halfway through, until vegetables are tender and the coating is a light golden brown. Then, drain and sprinkle with a light dusting of cheese.
