Elevate Cheerios with cheesy veggie appetizer bites.
Ingredients:
  • 1 package (8 oz) 1/3-less-fat cream cheese (Neufchâtel)
  • 1 cup shredded reduced-fat Cheddar cheese (4 oz)
  • 1 to 2 tablespoons milk
  • 1 medium carrot, finely chopped
  • 1/2 cup coarsely crushed Cheerios™ cereal
Instructions:
  • Allow cheeses to come to room temperature in a medium bowl for about 20 minutes until softened. Gradually beat in milk, 1 tablespoon at a time, using an electric mixer on low speed until well combined. Gently fold in carrots.
  • Shape the cheese mixture into 20 (1-inch) balls and arrange them on a plate. Cover and refrigerate for at least 8 hours, but no more than 24 hours.
  • Roll the cheese balls in cereal right before serving. Serve on baked whole-wheat crackers if desired.
