Try this delicious and wholesome breakfast recipe for a refreshing change from traditional options like Weet-bix and toast. Perfect for both breakfast and brunch!
Ingredients:
  • 180g rolled oats
  • 125g pecan
  • 20g puffed rice
  • 50g coconut flakes
  • 110g dried date
  • 75g buckwheat
  • 62.50 ml acai powder
  • 40.00 ml flaxseed
  • 5.00 gm ground cinnamon
  • 1.25 gm ground nutmeg
  • 60ml coconut oil
  • 60ml maple syrup
  • Greek yoghurt, to serve
  • Fresh raspberries, to serve
  • Fresh blueberries, to serve
Instructions:
  • Preheat the oven to 150C (130C fan-forced) and prepare 2 baking trays by lining them with baking paper.
  • In a large bowl, mix rolled oats, pecans, puffed rice, coconut, dates, buckwheat, acai powder, flaxseed, cinnamon, and nutmeg. Add coconut oil and maple syrup, then use your hands to mix everything together until fully combined.
  • Spread out the oat mixture evenly on the prepared trays. Roast in the oven for 35 minutes, swapping trays halfway through. Once done, take out from the oven and let cool completely.
  • Top the granola with yogurt, fresh berries, and an extra drizzle of maple syrup before serving.
