Spicy Balinese salad - perfect side dish.
Ingredients:
  • 9.20 gm peanut oil
  • 2.5cm-piece fresh ginger, finely chopped
  • 1 lemon grass stem, pale section only, finely chopped
  • 125ml (1/2 cup) water
  • 60ml (1/4 cup) white vinegar
  • 40.00 gm caster sugar
  • 1 Lebanese cucumber, cut into 5cm-long matchsticks
  • 1 carrot, cut into 5cm-long matchsticks
Instructions:
  • In a small saucepan over medium heat, gently heat the oil. Stir in the ginger and lemongrass, cooking for 1 minute until fragrant. Next, add water, vinegar, and sugar. Once it comes to a boil, stir until the sugar dissolves. Lower the heat and simmer for 5 minutes until slightly reduced.
  • Combine the cucumber and carrot, allowing the mixture to cool.
