Microwaved acorn squash with apples, butter, brown sugar, cinnamon, and walnuts for a cozy and comforting veggie treat.
Ingredients:
  • 1 acorn squash
  • 2 apples, cored and sliced
  • 2 tablespoons brown sugar
  • 1 tablespoon finely chopped walnuts
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground cinnamon
Instructions:
  • Effortlessly peel acorn squash by boiling it for 15 minutes, then transferring it to cold water for 5 minutes to cool. Once cool, remove peel using a knife for ridges and a teaspoon for valleys. Slice squash in half, remove seeds and stem, then cut into 1-inch chunks.
  • Combine squash chunks and apples in a large microwave-safe bowl. Add butter and sprinkle with brown sugar, walnuts, salt, and cinnamon. Cover with plastic wrap, poke a few holes for ventilation.
  • Microwave the squash-apple mixture on full power for 7 minutes and 30 seconds. Uncover, stir well, and cook for another 7 minutes and 30 seconds or until tender. Serve hot.
