Savory Cheddar-stuffed acorn squash with tangy Granny Smith apples creates a mouthwatering dish.
Ingredients:
  • 3 acorn squash, halved and seeded
  • 2 tablespoons stick margarine
  • 1 cup chopped onions
  • 3 cups peeled, seeded, and chopped Granny Smith apples
  • 0.5 cup golden raisins
  • 2 tablespoons light brown sugar
  • 1 teaspoon ground cinnamon
  • 1.5 cups shredded Cheddar cheese
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect temperature to prepare your delicious dish.
  • On a baking sheet, arrange squash halves cut-side down and add 1/2 inch of water to the sheet.
  • Roast the squash in the oven until tender for 40 minutes. Remove any excess water from the baking sheet.
  • As the squash bakes, melt margarine in a large skillet over medium heat. Sauté onion and apple until onion is soft and translucent, about 10-15 minutes. Transfer to a bowl to cool while waiting for the squash to finish baking.
  • After the squash is cooked, blend in raisins, brown sugar, cinnamon, and Cheddar cheese with the apple mixture. Then, place the squash halves on the baking sheet cut-side up and stuff them with the apple mixture.
  • Place the squash back in the oven and bake until the filling is heated through and the cheese is gooey, approximately 15 minutes.
