Apple Stuffed Chicken Breast

Chicken breasts stuffed with cheddar cheese and sweet apples, sautéed to perfection.
Ingredients:
  • 2 skinless, boneless chicken breasts
  • 0.5 cup chopped apple
  • 2 tablespoons shredded Cheddar cheese
  • 1 tablespoon Italian-style dried bread crumbs
  • 1 tablespoon butter
  • 0.25 cup dry white wine
  • 0.25 cup water
  • 1 tablespoon water
  • 1.5 teaspoons cornstarch
  • 1 tablespoon chopped fresh parsley, for garnish
Instructions:
  • Mix together the fresh apple, savory cheese, and crunchy bread crumbs. Set aside for later.
  • Pound chicken breasts to 1/4 inch thickness. Fill each breast with apple mixture and roll up, securing with toothpicks.
  • In a 7-inch skillet over medium heat, melt butter or margarine. Brown stuffed chicken breasts in the skillet. Pour in wine and 1/4 cup water, cover, and simmer for 15 to 20 minutes until chicken is cooked through.
  • Place the chicken on a serving platter. Mix 1 tablespoon water with cornstarch and add to the juices in the pan. Cook and stir until the sauce thickens. Pour the gravy over the chicken, sprinkle with parsley, and serve.
