Apple Sage Roasted Chicken

Savor the deliciously fragrant apple-stuffed roasted chicken for a hearty meal.
Ingredients:
  • 1 medium Gala apple, cored
  • 1 whole chicken (3 to 4 lb)
  • 3 tablespoons butter or margarine, softened
  • 3 tablespoons chopped fresh sage leaves
  • 1 teaspoon kosher (coarse) salt
  • 1/2 teaspoon freshly ground pepper
  • 1 cup apple cider
  • Fresh sage sprigs, if desired
Instructions:
  • Preheat oven to 425°F. Slice apple into wedges and stuff them inside the chicken.
  • Mix butter, chopped sage, salt, and pepper in a small bowl. Gently separate the skin from the chicken breasts using your fingers, starting at the leg end, being careful not to tear the skin. Spread half of the sage butter under the skin covering the breasts, then rub the remaining butter on the outside of the chicken. Fold the wings under the back and tie or skewer the drumsticks together. Place the chicken breast side down on a rack in a shallow roasting pan or a 13x9-inch pan fitted with a rack. Loosely cover with foil and insert an ovenproof meat thermometer into the thickest part of the inside thigh muscle without touching the bone.
  • Roast for 25 minutes. In a 1-quart saucepan, bring cider to a boil over medium-high heat. Simmer for 6 to 8 minutes until cider reduces to 2 tablespoons.
  • Gently flip the chicken breast side up. Continue roasting for 45 more minutes, brushing with cider reduction every 15 minutes, until the thermometer shows a minimum of 165°F and the drumsticks are easily movable when lifted. Loosely cover with foil and allow to rest for 15 minutes for easy carving. Finish by decorating with sage sprigs.
