Apple and bread stuffed baked chicken breasts - a cozy, holiday-inspired one dish meal for any time of year.
Ingredients:
  • 2 cups milk
  • 3 eggs
  • 1 cup dry bread crumbs
  • 4 skinless, boneless chicken breast halves
  • 1 Red Delicious apple, cored and diced
  • 1 (8 ounce) package dry bread stuffing mix
  • 2 cups apple juice, or as needed
  • 2 tablespoons butter, or as needed
  • 1 Red Delicious apple - peeled, cored and diced
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect temperature to start baking.
  • Pour milk into a shallow bowl. In another bowl, whisk together eggs and water. Place breadcrumb on a plate. Dip chicken breast halves in milk, then egg, then coat with breadcrumbs. Set aside on a plate.
  • Follow the package instructions to prepare the stuffing mix, using apple juice instead of water. When melting the butter with the apple juice, toss in the diced apple with peel. Mix in the stuffing until all liquid is soaked up. Spread the stuffing in a baking dish, and garnish with apple pieces. Arrange the chicken breasts over the stuffing and cover with foil.
  • Roast until chicken juices run clear, usually 45 to 50 minutes.
