Tender pork tenderloin seared with garlic, brown sugar, soy sauce, and cane vinegar, served with fluffy steamed rice.
Ingredients:
  • 2 tablespoons vegetable oil, or as needed
  • 1 onion, chopped
  • 1 head garlic, crushed
  • 2 pounds pork belly, cut into 1-inch squares
  • 0.75 cup soy sauce, or to taste
  • 0.25 cup water
  • 1.5 teaspoons whole black peppercorns
  • 2 bay leaves
  • 0.25 cup cane vinegar
  • 3 tablespoons brown sugar, or more to taste
  • 1.5 teaspoons dried basil leaves, or more to taste
Instructions:
  • In a skillet, heat oil over high heat. Sauté onion and garlic until fragrant, about 1 minute. Brown pork on each side for 2 to 3 minutes. Add soy sauce, water, peppercorns, and bay leaves. Cover and simmer on low heat for 1 to 2 minutes until liquid is simmering.
  • Uncover the stockpot to reveal the bubbling mixture. Let the vinegar infuse and the liquid thicken for 3 to 5 minutes. Then, blend in the brown sugar and basil. Cover the pot and let it simmer until the pork becomes tender and the sauce thickens, taking about 10 to 15 minutes.
