Spiced batter for versatile Danish pancakes, perfect with any filling.
Ingredients:
  • 1 cup whole wheat flour
  • 2 tablespoons white sugar
  • 2.5 teaspoons baking powder
  • 0.25 teaspoon ground cinnamon
  • 1 dash ground nutmeg
  • 1 dash ground cloves
  • 1 egg, lightly beaten
  • 0.75 cup milk
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
Instructions:
  • Combine the flour, sugar, baking powder, salt, cinnamon, nutmeg, and cloves in a large bowl, then mix in the egg, milk, butter, and vanilla until just combined.
  • Preheat the aebleskiver pan over medium heat and grease it with cooking spray.
  • Fill each cup with batter to 2/3 full. Cook until golden brown on the bottom for 3 to 4 minutes. Remember the order of the cups for rotation. Use a long skewer or knitting needle to lift one edge, rotate 1/4 turn for the batter to spread and cook. Repeat until a golden brown ball forms. Drain on paper towels.
