Delicious Danish pancake balls, served hot with syrup or powdered sugar.
Ingredients:
  • 2 large egg whites
  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • 2 large egg yolks
  • 4 tablespoons butter, melted
  • 1 tablespoon white sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup vegetable oil for frying
Instructions:
  • Using an electric mixer, whip egg whites in a clean glass or metal bowl until stiff peaks form. Reserve for later use.
  • Combine buttermilk, flour, egg yolks, melted butter, sugar, baking powder, baking soda, and salt in a large bowl. Beat until velvety smooth, then delicately fold in the fluffy egg whites.
  • Preheat your aebleskiver pan over medium heat and pour 1 tablespoon of vegetable oil into each cup.
  • Pour approximately 2 tablespoons of batter into each prepared cup. Once bubbles start to form around the edges, swiftly flip the pancake. Danish chefs traditionally use a long knitting needle, but a fork will suffice. Keep cooking, continuously turning the pancake to prevent it from overcooking.
