Retro-inspired New Zealand delicacy, a must-try iconic export!
Ingredients:
  • 250g butter, softened
  • 135.00 gm brown sugar
  • 32.50 gm Cocoa
  • 415.00 ml plain flour
  • 625.00 ml cornflakes
  • Walnuts, to decorate
  • 225.00 gm icing sugar mixture
  • 20.00 gm cocoa powder
  • 40.00 gm hot water
Instructions:
  • Preheat your oven to 180C/160C fan-forced, then grease and line 2 large baking trays with baking paper.
  • In an electric mixer, cream together butter and sugar until light and fluffy. Add cocoa and flour, mix on low speed until combined. Gently fold in cornflakes. Shape level tablespoons of dough into balls, slightly flatten them, then place on prepared trays with 4cm space between each for spreading while baking.
  • Bake for 15 to 18 minutes, or until slightly firm to the touch, rotating trays halfway through. Allow to cool completely on trays.
  • Create Chocolate Icing: In a bowl, sift icing sugar and cocoa. Slowly stir in hot water until smooth and well combined.
  • Top each biscuit with a generous dollop of icing, gently spreading it. Garnish with walnuts and let sit for 1 hour to firm up before serving.
