Easy, flavorful vegetarian air fried falafel made from scratch with fresh herbs.
Ingredients:
  • 1 (15.5 ounce) can chickpeas, rinsed and drained
  • 1 small yellow onion, quartered
  • 3 cloves garlic, minced
  • 0.33333334326744 cup roughly chopped parsley
  • 0.33333334326744 cup chopped scallions
  • 0.33333334326744 cup roughly chopped cilantro
  • 1 teaspoon ground cumin
  • 0.5 teaspoon kosher salt
  • 0.125 teaspoon crushed red pepper flakes
  • 4 tablespoons all-purpose flour
  • olive oil cooking spray
Instructions:
  • Pat dry chickpeas on paper towels. Combine onions, garlic, parsley, scallions, cilantro, cumin, salt, and red pepper flakes in a food processor fitted with a steel blade. Pulse until blended for 30 to 60 seconds. Add chickpeas and pulse 2 to 3 times until slightly blended. Mix in flour and baking powder, scrape the sides of the bowl with a spatula, and pulse 2 to 3 times.
  • Cover and chill in the refrigerator for 2 to 3 hours.
  • Shape the falafel mixture into 12 balls, using a light dusting of flour on your hands and work surface if needed.
  • Preheat the air fryer as per the manufacturer's instructions to a cozy 350 degrees F (175 degrees C). Give the falafel a spritz with cooking spray.
  • Air fry until beautifully golden brown in the preheated appliance, approximately 14 minutes, remembering to flip halfway through for an even crispiness.
