Indulge in crispy Air Fryer falafel fritters - a healthier, vegetarian twist on the classic Middle Eastern dish. Perfect for any occasion, serve with wraps, salads, or pita bread for a savory delight with friends or for a quick dinner.
Ingredients:
  • 2 x 400g cans no-added-salt chickpeas
  • ½ white onion, finely chopped
  • 5.00 gm ground cumin
  • 1 tsp ground coriander
  • 24.00 gm sesame seeds, plus 24.00 gm extra
  • ½ cup chopped fresh herbs (such as parsley, coriander or mint)
  • 42.00 gm lemon juice
  • ½ tsp bicarbonate of soda
  • 2-60.00 ml besan flour (see note), plus extra, to dust
  • Lemon wedges, to serve
  • 130g (½ cup) natural yoghurt
  • 24.00 gm tahini
Instructions:
  • Combine chickpeas, onion, garlic, cumin, coriander, sesame seeds, herbs, lemon juice, and bicarbonate of soda in a food processor until nearly smooth, leaving some texture. Transfer the mixture to a bowl and incorporate flour by hand until fully combined.
  • Coat your hands with a dusting of flour and form the chickpea mixture into 24 round shapes, flattening them slightly. Spread sesame seeds on a plate and gently press each falafel into the seeds for a light coating. Transfer the falafels to a tray, cover with plastic wrap, and chill in the fridge for 30 minutes to set.
  • - Preheat your air fryer to 200°C for 3 minutes. - Lightly coat the falafel with olive oil. - Place half of the falafel in a single layer in the air fryer basket. - Air fry for 5 minutes, flip carefully, then continue cooking for an additional 4-5 minutes until golden brown. - Repeat with the remaining falafel.
  • Prepare a creamy yogurt dressing by mixing together yogurt, fresh lemon juice, and rich tahini in a bowl.
  • Present falafel alongside a creamy yogurt dressing and fresh lemon wedges.
