Air fryer gluten-free falafel: Crispy, flavorful, and easy with almond flour and herbs.
Ingredients:
  • 1 (15.5 ounce) can chickpeas, drained
  • 1 small yellow onion, roughly chopped
  • 0.5 cup chopped fresh cilantro
  • 0.5 cup chopped fresh parsley
  • 2 tablespoons almond flour
  • 3 cloves garlic
  • 2 teaspoons ground cumin
  • 1 teaspoon cayenne pepper
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon coarse salt
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon baking soda
  • 1 pinch ground nutmeg
  • sesame oil cooking spray
Instructions:
  • Add the chickpeas to the basket of a large air fryer and cook at 220°F (104°C) until they are mostly dry, about 15 minutes. Remember to check after 10 minutes to ensure all liquid has evaporated and the chickpeas are still soft and squishy, not toasted or hard. Once done, switch off the air fryer.
  • Place chickpeas in a food processor and combine with onion, cilantro, parsley, almond flour, garlic, cumin, cayenne, baking powder, salt, pepper, baking soda, and nutmeg. Pulse on medium-high speed until a chunky paste forms.
  • Chill mixture for 30 minutes to 1 hour to enhance flavors and aid in drying.
  • Shape mixture into 1 1/4-inch balls, then gently coat with sesame oil spray before placing in the air fryer basket. Remember, falafel can be fragile.
  • Preheat the air fryer to 320 degrees F (160 degrees C) and cook for 10 minutes. If desired, add more sesame oil, increase the temperature to 350 degrees F (175 degrees C), and continue cooking until crispy and golden brown, about 10 more minutes.
