Crispy air fryer falafel in pita with veggies and tahini for a quick and tasty meal.
Ingredients:
  • For the tahini sauce:
  • 1/2 cup tahini (I like Joyva )
  • 1/4 cup Greek yogurt
  • 1/2 lemon, juice only
  • 2 tablespoons olive oil
  • 1/4 to 1/2 cup hot water
  • For the falafel:
  • 2 (15-ounce) cans chickpeas, rinsed and drained
  • 1/4 cup fresh parsley
  • 1/4 cup cilantro
  • 2 cloves garlic
  • 1 large shallot, chopped
  • 2 tablespoons sesame seeds
  • Spray olive oil, for cooking
  • For serving:
  • 6 pita breads
  • Fresh lettuce
  • 1 large tomato, sliced thin
  • 1/2 red onion, sliced thin
  • 1 cucumber, sliced thin
Instructions:
  • Prepare the tahini sauce by combining tahini, yogurt, lemon juice, and olive oil in a bowl. Initially thick, gradually mix in 1/4 to 1/2 cup hot water until it reaches a smooth, spreadable consistency.
  • Prepare the falafel mixture by combining chickpeas, parsley, cilantro, garlic, shallot, flour, sesame seeds, cumin, paprika, lemon, and salt in a food processor. Pulse until a coarse paste forms. Shape the mixture into 1-inch diameter discs using a tablespoon. Form 25 to 30 falafel discs in total.
  • Prepare the falafel: Lightly coat the air fryer basket with nonstick olive oil spray. Arrange the falafel discs in the basket without overcrowding and lightly spray them with olive oil. Air fry at 350°F for 8 minutes, flip, then air fry for an additional 6 minutes. Repeat until all falafel is cooked.
  • To serve the falafel, place them in warm pita bread (microwave the pita for 15 seconds). Top with tahini yogurt sauce and your favorite toppings. Store any leftovers in the fridge for 5 to 6 days or freeze for longer storage. Reheat falafel in a 350°F oven for 10 to 12 minutes until heated through.
