Upgrade the classic McVities Penguin biscuit by wrapping it in flaky pastry and air frying it for a deliciously decadent treat that will become a staple in your snack rotation.
Ingredients:
  • 55g (1/4 cup) caster sugar
  • 2 sheets frozen puff pastry, just thawed
  • 147g pkt McVities Penguin Biscuits
  • Ice cream or custard, to serve (optional)
Instructions:
  • 1. Sprinkle 1 tbsp caster sugar over a clean, flat surface. Lay one sheet of pastry over the sugar. Sprinkle with 1 tbsp sugar. Place the remaining puff pastry sheet on top, sprinkle with 1 tsp sugar, and roll out the pastry with a rolling pin to a 28 x 39cm rectangle. Slice into six 13 x 14cm rectangles.
  • Center a biscuit on each rectangle. Slice the pastry into 3 strips along the long sides of the filling. Fold the short ends over the filling, then fold one strip over the filling followed by another strip from the opposite side, slightly overlapping. Repeat until the filling is fully enclosed. Repeat the process with the remaining pastry and biscuits.
  • Coat the air fryer basket with oil and arrange the pastries inside. Air fry at 190°C for 10 minutes.
  • Top with a scoop of ice cream or custard, if desired.
