Air fried asparagus and tomatoes with balsamic drizzle and crumbled feta.
Ingredients:
  • 0.33 cup balsamic vinegar
  • 1 pound fresh asparagus, tough ends trimmed
  • 2 cups cherry tomatoes
  • 1 tablespoon olive oil
  • 2 tablespoons crumbled feta cheese
Instructions:
  • Preheat your air fryer to 400°F (200°C) following the manufacturer's instructions.
  • Microwave balsamic vinegar in a microwave-safe container until it reduces by half, about 2 1/2 to 3 minutes. Set aside.
  • Toss asparagus, cherry tomatoes, olive oil, salt, and pepper in a large bowl until evenly coated. Arrange the vegetables in a single layer in the air fryer basket, possibly in batches.
  • Air fry the asparagus until it's lightly browned and the tomatoes start to burst, approximately 10 minutes.
  • Arrange vegetables elegantly on a platter, then drizzle with flavorful reduced balsamic vinegar. Finish with a generous sprinkle of creamy feta cheese before serving warm.
