Tender chicken marinated in buttermilk, lemon juice, & spices, cooked in the air fryer for a juicy & flavorful dinner.
Ingredients:
  • 2 cups buttermilk
  • 1 lemon, juiced
  • 1 tablespoon plus 1 teaspoon kosher salt, divided
  • 1 teaspoon black pepper
  • 1 1/2-2 pounds boneless skinless chicken breasts
  • 3 cups all-purpose flour
  • 1 1/2 tablespoon baking powder
  • 1 1/2 tablespoon garlic powder
  • 1 1/2 tablespoon paprika
  • Nonstick spray for cooking
  • Parsley, chopped, for garnish
  • BBQ sauce, for dipping
Instructions:
  • Get the air fryer basket ready by giving it a light coat of nonstick spray.
  • Prepare the buttermilk marinade by combining buttermilk, lemon juice, 1 tablespoon salt, and black pepper in a medium bowl. Use a fork to mix until combined.
  • Prepare the chicken: Slice chicken breasts into uniform 1/2-inch-thick strips that are 3-4 inches long for even cooking. Marinate the chicken in the refrigerator for at least 1 hour or up to overnight.
  • Prepare the breading by whisking together flour, baking powder, garlic powder, paprika, and 1 teaspoon of salt in a large bowl. Stir in 1/4 cup of the buttermilk marinade to create lumps for extra crunchy coating on the chicken.
  • Dredge each chicken tender in buttermilk, coat with flour mixture thoroughly, and transfer to the air fryer basket. Repeat for all tenders (4-5 at a time) and place any remaining tenders on a sheet pan for later frying.
  • For crispy chicken tenders in the air fryer, arrange tenders in a single layer with space between them. Spray with non-stick cooking spray. Air fry at 350˚F for 6 minutes, then flip and air fry for another 6 minutes until golden brown and internal temperature reaches 165˚F. Keep warm in a 250˚F oven while cooking remaining batches.
  • Sprinkle parsley over the chicken tenders for a vibrant touch, then enjoy them warm with tangy barbecue sauce or your preferred dip.
