Air fryer ranch chicken bites with gooey melted Cheddar on top.
Ingredients:
  • 1 pound boneless, skinless chicken thighs, trimmed and cut into 1-inch cubes
  • 2 tablespoons avocado oil
  • 1 tablespoon white vinegar
  • 1.5 teaspoons dry ranch dressing mix (such as Hidden Valley Ranch®)
  • 1 teaspoon garlic powder
  • 0.5 teaspoon freshly ground black pepper
  • 3 tablespoons shredded extra-sharp Cheddar cheese
  • 1 tablespoon chopped fresh parsley
Instructions:
  • In a large bowl, mix chicken with avocado oil, white vinegar, ranch powder, garlic powder, salt, and pepper until well coated. Cover and refrigerate for 30 to 60 minutes max to avoid a mushy texture.
  • Preheat your air fryer to 380 degrees F (190 degrees C) and arrange the chicken cubes in a single layer in the basket, ensuring they are not touching.
  • Air fry the chicken until it's cooked through, flipping once when the edges start to brown, for 8 to 11 minutes. Ensure not to overcook it. Use an instant-read thermometer near the bone to verify it reaches 165 degrees F (74 degrees C). Time may vary based on your air fryer's size and brand, and consider cooking in batches if needed.
  • Top the chicken with a generous amount of Cheddar cheese, then place back in the air fryer until the cheese is gooey and melted, which should take around 30 seconds. To serve, sprinkle with chopped parsley for a flavorful finishing touch.
