Fire-roasted salsa made with air-fried tomatoes, onion, garlic, and jalapeno for a fantastic restaurant-quality dip.
Ingredients:
  • 4 Roma tomatoes, halved lengthwise
  • 1 jalapeno pepper, halved and seeded
  • 0.5 red onion, cut into 2 wedges
  • cooking spray
  • 4 cloves garlic, peeled
  • 0.5 cup chopped cilantro
  • 1 lime, juiced
  • salt to taste
Instructions:
  • Heat up your air fryer to 390 degrees F (200 degrees C).
  • Arrange tomatoes, jalapeno, and red onion in the air fryer basket skin-side down, then spritz lightly with cooking spray to enhance the roasting.
  • After air frying the vegetables for 5 minutes, enhance the flavors by adding garlic cloves to the basket. Lightly spray with cooking spray and continue air frying for an extra 5 minutes.
  • Allow the vegetables to cool on a cutting board for 10 minutes.
  • If desired, peel the skins off the tomatoes and jalapeno - they should come off easily. Cut the tomatoes, jalapeno, and onion into large chunks and place them in a food processor. Add garlic, cilantro, lime juice, and salt. Pulse a few times until the vegetables are finely chopped; be careful not to overdo it. Enjoy the salsa at room temperature or chill it to enhance the flavors.
