Crispy air fryer veggies with flavorful gremolada and red pepper aioli, a delicious appetizer or side dish.
Ingredients:
  • 1 zucchini, cut into 1/4-x3-inch pieces (about1 cup)
  • 1 summer squash, sliced
  • 1/4 inch thick (about 1 cup)
  • 1 (8-ounces) pkg. cremini mushrooms, halved orquartered if large
  • 3/4 cup cauliflower florets
  • 6 desired-color mini bell peppers
  • 2 teaspoon vegetable oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup chopped fresh parsley
  • 2 teaspoon minced fresh garlic
  • 2 teaspoon lemon zest
  • Red Pepper Aioli
  • 1/2 cup mayonnaise
  • 2 tablespoons chopped jarred roasted redpeppers, drained
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon minced fresh garlic
Instructions:
  • Preheat your air fryer to a toasty 360 degrees F (180 degrees C).
  • In a bowl, mix zucchini, summer squash, mushrooms, cauliflower, bell peppers, oil, salt, and black pepper together until well coated. Place vegetables in a single layer in the air fryer basket, working in batches as necessary.
  • Cook until tender, turning halfway through, for approximately 10 minutes.
  • Prepare a flavorful gremolata by combining parsley, garlic, and lemon zest in a small bowl.
  • Mix mayonnaise, roasted red peppers, olive oil, red wine vinegar, and garlic in a small bowl to create a flavorful red pepper aioli.
  • Sprinkle roasted vegetables with zesty gremolata and accompany with a side of flavorful red pepper aioli.
