Air Fryer Shrimp Fajitas

Simple air fryer shrimp fajitas on soft flour tortillas, customizable with your favorite toppings!
Ingredients:
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 1 (1.12 ounce) package fajita seasoning mix, divided
  • 3 tablespoons olive oil, divided
  • 1 red bell pepper, sliced into thin strips
  • 1 green bell pepper, sliced into thin strips
  • 1 red onion, sliced into thin strips
  • 4 (10 inch) flour tortillas, toasted
Instructions:
  • Preheat the air fryer until it reaches 400 degrees F (200 degrees C).
  • In a bowl, coat shrimp with 2 teaspoons of flavorful fajita seasoning. Add 1 tablespoon of oil and mix well until shrimp are evenly coated.
  • Transfer the bell pepper and onion strips to a separate bowl. Sprinkle the remaining seasoning on top, then drizzle with the remaining 2 tablespoons of oil and mix well to combine.
  • Cook the vegetables in the preheated air fryer for 12 minutes, shaking halfway through, then transfer them to a large bowl.
  • Arrange the shrimp in the air fryer basket and air fry for 5 minutes. Then, simply flip them over and continue air frying for an additional 3 minutes.
  • Arrange a colorful medley of vegetables onto each soft tortilla and generously layer succulent shrimp on top.
