Air fryer shrimp tempura with homemade dipping sauce or sweet chili sauce for a delicious twist on a classic dish.
Ingredients:
  • 2 tablespoons soy sauce
  • 2 tablespoons sherry
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon oyster sauce
  • 1 tablespoon chopped scallions
  • 1 teaspoon white sugar
  • 1 teaspoon lemon juice
  • 0.5 teaspoon ginger stir-in paste
  • 0.5 cup cornstarch
  • 0.5 cup all-purpose flour
  • 0.5 cup club soda
  • 1 egg, beaten
  • 1 pound large shrimp - peeled, deveined, and tails left on
Instructions:
  • Prepare the sauce: Combine soy sauce, sherry, rice wine vinegar, oyster sauce, scallions, sugar, lemon juice, and ginger stir-in paste in a small bowl. Whisk until fully mixed. Set aside.
  • Create a light and crispy coating for the shrimp by combining cornstarch, flour, club soda, and beaten egg in a large bowl. Gently mix in the shrimp until they are fully coated.
  • Preheat the air fryer to 400 degrees F (200 degrees C) following the manufacturer's instructions, then cut a piece of parchment paper to fit the basket and set it aside.
  • Using tongs, dip shrimp by the tail into batter, letting excess batter drip off. Arrange shrimp on the parchment paper without overcrowding, then transfer to the air fryer basket. Cook shrimp in batches as needed.
  • Air fry the shrimp until perfectly crispy, for about 8 minutes. Repeat with the rest of the shrimp. Serve hot with your favorite sauce.
