Crispy golden air fryer zucchini chips - a simple and irresistible side dish made with just a few key ingredients.
Ingredients:
  • 1 pound zucchini
  • 1/2 teaspoon kosher salt
  • 1/3 cup plain fine breadcrumbs
  • 3 tablespoons freshly grated Parmesan
  • 2 teaspoons cornstarch
  • 1 teaspoon granulated garlic
  • 1/4 teaspoon freshly ground black pepper
  • Pinch of cayenne
  • 1 tablespoon olive oil
  • Cooking spray
Instructions:
  • 1. Prepare the zucchini by trimming the ends off and slicing it into 3/16-inch thick rounds. Place the zucchini in a medium bowl, add a pinch of salt, and gently toss to coat. Allow the zucchini to sit for 5 minutes to release moisture.
  • Prepare the breadcrumb mixture by combining breadcrumbs, Parmesan (if desired), cornstarch, granulated garlic (if preferred), freshly ground black pepper, a pinch of cayenne (if desired), and the remaining 1/2 teaspoon of salt in a small bowl.
  • Pat dry the zucchini slices with a kitchen towel to remove excess moisture. Preheat the air fryer to 325°F, or select the "air fry" setting based on your air fryer type.
  • Toss zucchini rounds with olive oil until evenly coated. Depending on the size of your air fryer, work in 2 batches for cooking.
  • Coat the first batch of zucchini rounds with half of the breadcrumb mixture using a large spoon or spatula to prevent breadcrumbs from sticking to your hands.
  • Air fry the zucchini: Spray the air fryer basket with nonstick cooking spray, layer zucchini rounds, and cook at 325°F for 10 minutes. Flip and cook for an additional 8-12 minutes until golden and crispy. Finish with Parmesan, serve immediately or let it rest on a wire rack. Store leftovers in the fridge for up to 3 days.
