Crispy on the outside, soft and chewy on the inside air-fried gnocchi for a delightful texture.
Ingredients:
  • 3 cups grape tomatoes, halved
  • 0.25 cup olive oil
  • 1 teaspoon minced fresh oregano
  • 0.5 teaspoon minced garlic
  • salt and freshly ground black pepper to taste
  • 1 (16 ounce) package packaged gnocchi
  • 4 tablespoons unsalted butter
  • 3 tablespoons grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley
Instructions:
  • Combine tomatoes, olive oil, oregano, garlic, salt, and pepper in a large bowl, stirring until well mixed.
  • Bring a large pot of water to a boil. Cook gnocchi until they float, about 3 minutes. Drain in a colander and shake off excess water.
  • Preheat your air fryer to 400°F (200°C) as per the manufacturer's directions.
  • In a large microwave-safe bowl, melt butter and mix in Parmesan cheese. Add drained gnocchi and coat evenly. Transfer gnocchi to the air fryer basket and air fry for 12 minutes, shaking the basket every 3 minutes.
  • Spoon the reserved tomato mixture into serving bowls and layer with crispy fried gnocchi. Sprinkle with fresh chopped parsley for a flavorful finish.
