Crispy air-fried jackfruit nuggets bursting with flavor - a delicious plant-based twist on classic chicken nuggets.
Ingredients:
  • 1 cup almond milk
  • 1 teaspoon apple cider vinegar
  • 3 tablespoons aquafaba (chickpea water)
  • 2 tablespoons cornstarch
  • 2 cups all-purpose flour
  • 3 tablespoons paprika
  • 3 tablespoons ground white pepper
  • 2 tablespoons garlic salt
  • 1 tablespoon celery salt
  • 1 tablespoon ground ginger
  • 1 tablespoon dried mustard powder
  • 1 tablespoon ground black pepper
  • 1.5 teaspoons ground thyme
  • 1.5 teaspoons dried basil
  • 1 cup panko bread crumbs
  • 6 rice paper sheets
  • 1 (14 ounce) can jackfruit, drained and shredded
  • 1 tablespoon vegetable oil
Instructions:
  • Combine almond milk and vinegar, allowing the mixture to sit for 5 minutes. Then, vigorously whisk in aquafaba and cornstarch until smooth.
  • Combine an array of flavorful spices with flour in one bowl, ensuring a perfect blend. Then, move on to coat the breadcrumbs in a separate bowl.
  • Cut rice paper sheets in half. Soften one piece by soaking it in warm water for 30 seconds to 1 minute. Place the rice paper on a work surface, add jackfruit, fold the edges, and roll into a nugget shape. Repeat with the rest of the rice paper and jackfruit.
  • Coat each nugget in the flour mixture, then dip in the milk mixture, followed by the bread crumbs, and finally back into the flour mixture until fully coated.
  • Coat the air fryer basket with cooking spray and arrange the nuggets, ensuring they are evenly spaced.
  • Air-fry the nuggets at 370 degrees F (188 degrees C) for 10 minutes, then flip them and cook for an additional 5 minutes until crispy.
