Peruvian-style chicken drumsticks topped with a flavorful spinach-lime crema.
Ingredients:
  • olive oil for brushing
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 2 cloves garlic, grated
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon ground black pepper
  • 6 (4 ounce) chicken drumsticks
  • 1 cup baby spinach leaves, stems removed
  • 0.75 cup sour cream
  • 0.25 cup cilantro leaves
  • 0.5 jalapeno pepper, seeded
  • 2 tablespoons fresh lime juice
  • 1 clove garlic, smashed
  • 0.25 teaspoon salt
Instructions:
  • Coat the air fryer basket with a drizzle of olive oil.
  • In a large bowl, mix together honey, 1 tablespoon of olive oil, garlic, salt, cumin, paprika, oregano, and pepper. Add drumsticks and toss until well coated. Stand the drumsticks vertically in the basket, leaning against the wall and each other.
  • Air fry at 400 degrees F (200 degrees C) until an instant-read thermometer in the thickest part of the drumstick reads 165 degrees F (74 degrees C), about 15 to 20 minutes, flipping drumsticks halfway through for even cooking.
  • Prepare the sauce by blending spinach, sour cream, cilantro, jalapeño, lime juice, garlic, salt, and pepper in a food processor until a smooth crema sauce is formed.
  • Gently pour crema sauce over drumsticks and present with extra crema on the side.
