Alfajores (Dulce de Leche Sandwich Cookies)

Indulgent Peruvian alfajores: Buttery, sweet, and vanilla-infused cookies. Perfect for any occasion.
Ingredients:
  • 2 cups sifted all-purpose flour
  • 0.5 cup sifted confectioners' sugar
  • 0.25 cup sifted cornstarch
  • 0.25 teaspoon salt
  • 2 sticks unsalted butter, softened
  • 0.25 cup white sugar
  • 1 (11.5 ounce) jar dulce de leche
  • 0.25 cup confectioners' sugar, or as needed for dusting
Instructions:
  • Combine flour, a half cup of confectioners' sugar, cornstarch, and salt in a bowl, blending them thoroughly.
  • Using an electric mixer, beat the butter in a separate bowl until soft and fluffy. Add white sugar and vanilla, mixing until well combined.
  • Gradually mix dry ingredients into wet ingredients, blending after each addition. Shape dough into 2 logs and chill in the fridge until firm, around 2 hours.
  • Heat your oven to 350°F (175°C).
  • Slice the dough logs into forty-eight 1/4-inch-thick cookies and arrange them on ungreased baking sheets.
  • Bake in the preheated oven for 8 to 10 minutes until the edges are just starting to turn golden.
  • After baking, allow the cookies to rest on the baking sheet for 1 minute. Then, transfer them to wire racks to cool completely for 25 to 30 minutes.
  • Spread a generous layer of dulce de leche on half of the cooled cookies using a knife. Sandwich the remaining cookies on top and transfer to a serving tray.
  • Sprinkle remaining confectioners' sugar lightly over the finished cookies.
