Indulgent alfajores cookies with dulce de leche filling, sprinkled with powdered sugar - a delightful Latin American delicacy perfect for any celebration.
Ingredients:
  • 2 (14 ounce) cans sweetened condensed milk
  • 1 tablespoon unsalted butter
  • 4 cups all-purpose flour
  • 1.5 cups unsalted butter, softened
  • 6 tablespoons powdered sugar
  • 1 tablespoon pisco or other brandy
  • 0.5 teaspoon baking powder
  • 1 cup powdered sugar, or more as needed
Instructions:
  • In a pot over medium-low heat, blend condensed milk and butter for filling. Simmer gently, stirring occasionally, until the mixture thickens and caramelizes to coat the back of a spoon, approximately 2 hours.
  • Combine flour, butter, powdered sugar, pisco, baking powder, and salt in a stand mixer fitted with the paddle attachment until a dough forms while the filling simmers.
  • Form the dough into a disc shape, then wrap it in plastic wrap. Chill in the refrigerator for 15 to 30 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C) and line 2 baking sheets with parchment paper.
  • Roll out the dough on a lightly floured surface to 1/8 or 3/16 inch thickness, then use a small cookie cutter to make about 80 circles. Place the cookies on the baking sheets and poke each one with a fork.
  • Bake cookies in a preheated oven until the edges are lightly golden, for about 12 minutes, rotating the pans halfway through to ensure even baking. Avoid overbrowning. Remove from the oven and transfer to a wire rack. Repeat with the remaining cookie dough.
  • Allow the filling to cool for about 15 minutes after simmering.
  • Take the filling and spread it over one side of 2 cookies, then press them together like sandwiches. Roll them in powdered sugar to coat. Repeat the process with the remaining cookies.
