Experience the delightful flavors of South American Alfajores cookies made easily with a cookie mix. Indulge in dulce de leche sandwiched between two cookies, topped with powdered sugar for a delectable treat.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 1 cup coconut
  • 1/2 cup pecan halves, toasted, finely chopped
  • 1/3 cup butter or margarine, softened
  • 1 can (13.4 oz) dulce de leche (caramelized sweetened condensed milk)
  • 2 tablespoons powdered sugar
Instructions:
  • Preheat oven to 375°F and prepare cookie sheets with parchment paper.
  • Combine cookie mix, 1/2 cup of coconut, pecans, butter, and egg in a large bowl, stirring until a stiff dough forms.
  • Roll out half of the dough on a floured surface to 1/4-inch thickness. Use a 2-inch round or fluted cookie cutter to cut out shapes and place them 2 inches apart on cookie sheets. Repeat this process with the remaining half of the dough.
  • Bake for 7 to 9 minutes until just set. Let cool for 2 minutes, then transfer from baking sheets. Allow to cool completely.
  • For each sandwich cookie, generously spread 2 teaspoons of dulce de leche on one cookie and top it with another cookie, bottom side down. Gently press them together so the delicious filling oozes out slightly. Roll the edges in the remaining 1/2 cup of coconut and place the cookies on a cooling rack.
  • Dust sandwich cookies with a sprinkle of powdered sugar and store them between sheets of waxed paper in a sealed container.
