Delightful vanilla-limon cookie sandwiches with caramel filling, rolled in coconut - a beloved classic in Latin cuisine.
Ingredients:
  • 1.6666666269302 cups unbleached all-purpose flour
  • 2.5 cups cornstarch
  • 0.5 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 cup unsalted butter, softened
  • 0.75 cup white sugar
  • 3 egg yolks
  • 1 teaspoon vanilla rum
  • 0.5 teaspoon vanilla extract
  • 0.5 teaspoon lemon extract
  • 2 teaspoons lemon zest
  • 1 (11.5 ounce) jar dulce de leche
  • 0.5 cup unsweetened shredded coconut
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and prepare your baking sheets with parchment paper. Mix together flour, cornstarch, baking soda, and baking powder; then set aside for later use.
  • Cream together the butter and sugar using an electric mixer until light and fluffy. Mix in the egg yolks one at a time, ensuring each yolk is fully incorporated before adding the next one. Add the vanilla rum, vanilla extract, lemon extract, and lemon zest along with the last egg. Carefully fold in the flour mixture with a spoon until a crumbly dough forms. Then, use your hands to shape the dough into a ball. Wrap it in plastic wrap and let it chill for 30 minutes to 1 hour.
  • Roll out the unique dough to 1/4 inch thickness, minimizing flour usage. Cut out with a small round cookie cutter. Reuse scraps by pressing together, rolling, and cutting until all dough is used. Arrange cookies 1/2 inch apart on prepared sheets.
  • Bake in the preheated oven for 7 to 10 minutes until just set. Then, transfer the cookies to a wire rack to cool.
  • Take a cooled cookie and spread a teaspoon of dulce de leche on the bottom. Press another cookie on top to create a caramel-filled sandwich. Roll the sides in shredded coconut for a finishing touch.
