Alfredo Chicken and Mushrooms

Creamy chicken and mushroom Alfredo ready in just 25 minutes for a delightful dinner.
Ingredients:
  • 1 tablespoon butter or margarine
  • 1 cup soft whole wheat bread crumbs (about 1 1/2 slices bread)
  • 6 boneless, skinless chicken breast halves (about 1 3/4 pounds)
  • 1/4 teaspoon pepper
  • 1 jar (17 ounces) Alfredo pasta sauce
  • 1 1/2 cups sliced mushrooms (4 ounces)
  • 4 medium green onions, sliced (1/4 cup)
  • 2 tablespoons chopped fresh or 1/2 teaspoon dried basil leaves
  • Additional chopped fresh basil, if desired
Instructions:
  • In a 12-inch nonstick skillet over medium heat, melt butter until golden brown, then cook bread crumbs in the butter for 2 to 3 minutes, stirring frequently, until they turn golden brown. Remove the bread crumbs from the skillet.
  • Prepare a skillet with cooking spray over medium heat. Season chicken with pepper and place in the skillet; cook for 3 to 4 minutes per side until browned. Add pasta sauce, mushrooms, onions, and 2 tablespoons of basil. Cover and simmer over medium-low heat for approximately 10 minutes, flipping the chicken once, until fully cooked.
  • Place the chicken beautifully on a serving plate. Drizzle the delicious sauce generously over it. Sprinkle a handful of bread crumbs on top. Finish off with a lovely garnish of fresh basil leaves.
