All Day Versatile Sauce

Slow-cooked meaty bones with veggies in tomato sauce, simmered until irresistible. Serve over pasta, bone-free.
Ingredients:
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 2 teaspoons dried basil
  • 0.5 pound beef neck bones
  • 1 (29 ounce) can tomato sauce
  • 1 (14.5 ounce) can stewed tomatoes
  • 2 (6 ounce) cans tomato paste
  • 1 pound lean ground beef
Instructions:
  • Heat 1 tablespoon of olive oil in a large pot, sauté onion, garlic, oregano, and basil until fragrant. Add the neck bones and simmer with the lid on until onions are translucent. If using ground beef, cook with the onion mixture.
  • After the onions have turned clear, incorporate the tomato sauce, tomatoes, tomato paste, and water into the mixture. If including meat in your dish, add it now. Cover and let simmer for several hours.
  • Remove and discard neck bones just before serving.
