Irresistible tofu stir-fry in savory peanut sauce - a versatile must-try for all diets, any day!
Ingredients:
  • 1 (14 ounce) can light coconut milk
  • 0.25 cup peanut butter
  • 1 teaspoon sriracha sauce
  • 0.5 teaspoon ground chile pepper
  • 2 carrots, diced
  • 1 red bell pepper, diced
  • 1 (14 ounce) package firm tofu, drained and cut into 1-inch cubes
  • 4 garlic cloves, minced
  • 2 tablespoons minced fresh ginger
  • 4 cups baby spinach
  • 1.5 cups cooked brown rice
Instructions:
  • Combine coconut milk, peanut butter, soy sauce, brown sugar, lime juice, Sriracha sauce, and ground chili pepper in a bowl and whisk until smooth.
  • In a large skillet, heat oil over medium-high heat. Sauté carrots and bell pepper until tender, for about 1 to 2 minutes. Brown tofu on each side for about 4 minutes. Stir in garlic and ginger, cook until fragrant, about 30 seconds.
  • Add the sauce to the skillet and mix well with the tofu and vegetables. Let it cook for about 5 minutes to blend the flavors. Lower the heat, gradually stir in the spinach, 1 cup at a time, until wilted. Serve the tasty dish over brown rice.
