All new Aussie sausage rolls

Elevate Aussie sausage rolls with creamy kewpie mayo and BBQ dipping sauce.
Ingredients:
  • 400g sausage mince
  • 300g beef mince
  • 1 brown onion, coarsely grated
  • 1 carrot, peeled, coarsely grated
  • 35g (1/2 cup) fresh breadcrumbs
  • 62.50 ml chopped fresh continental parsley
  • 2 eggs
  • 3 sheets frozen puff pastry, just thawed
  • 2.40 gm sea salt flakes
  • Kewpie mayonnaise, to serve
  • Barbecue sauce, to serve
  • Fresh coriander sprigs, to serve
Instructions:
  • In a bowl, mix together the sausage, beef mince, onion, carrot, garlic, breadcrumbs, parsley, and 1 egg. Season well and mix until fully combined (the mixture will be slightly sticky).
  • Preheat the oven to 200C (180C fan forced), then line 2 baking trays with baking paper and lightly whisk the remaining egg in a bowl.
  • Cut the pastry sheets in half. Divide the mince mixture into six equal portions and place one portion along the center of each piece of pastry. Brush one long edge with egg wash. Fold the pastry over to seal the filling, pressing gently. Cut each roll into thirds. Arrange the sausage rolls, seam side down, on the prepared trays. Brush the pastry with more egg wash. Use a sharp knife to make a few slits on the top for steam to escape. Sprinkle with sea salt. Bake for 35 minutes until beautifully golden and cooked through.
  • Drizzle mayonnaise over the sausage rolls, followed by barbecue sauce, and finish with a scattering of fresh coriander sprigs before serving.
