German-style beef stew with caraway, perfect for Halloween festivities. Rich, warming flavors for cool autumn evenings.
Ingredients:
  • 3 tablespoons canola oil, divided
  • 1 clove garlic, minced
  • 2 onions, chopped
  • 2.5 pounds beef stew meat, cut into 1 1/2 inch cubes
  • 2 teaspoons pepper
  • 2 tablespoons caraway seed
  • 1 tablespoon all-purpose flour
  • 7 cups beef broth
  • 2 bay leaves
  • 1 tablespoon white sugar
  • 1 teaspoon nutmeg
  • 3 large potatoes, peeled and cubed
  • 3 large carrots, peeled and chopped
  • 1 tablespoon cornstarch
  • 0.25 cup water
  • 0.25 cup chopped fresh parsley
Instructions:
  • In a Dutch oven over medium-high heat, heat 1 tablespoon of canola oil. Add garlic and onion, cooking until softened and translucent; then remove from pan. Add another 2 tablespoons of canola oil to the Dutch oven. Meanwhile, season beef with salt and pepper. Sear beef in batches until browned all over, approximately 5 minutes.
  • Add caraway seeds and flour to the pot, stirring until fragrant, for about 1 minute. Pour in beef broth, then add bay leaves, sugar, nutmeg, and onion mixture. Bring to a boil, then simmer covered on medium-low heat until the meat is tender, for about 2 hours.
  • Add the potatoes and carrots, cook until tender for approximately 30 minutes. Mix water with cornstarch and stir into the stew with parsley. Let it simmer until thickened for about 5 minutes.
