Almond and apple cake

Seasonal apple cake: Moist and effortless for any celebration.
Ingredients:
  • Melted butter, to grease
  • 180g butter, at room temperature, chopped
  • 140g (2/3 cup) caster sugar
  • 4.40 gm vanilla essence
  • 3 eggs, at room temperature
  • 100g (1 cup) almond meal
  • 150g (1 cup) self-raising flour
  • 80ml (1/3 cup) milk
  • 2 small red apples (such as Royal Gala), quartered, cored, thinly sliced
  • Vanilla custard, to serve
Instructions:
  • Preheat your oven to 170°C. Grease a round 22cm cake pan with melted butter and line with non-stick baking paper.
  • Using an electric beater, whip together the butter, sugar, and vanilla in a bowl for 8 minutes until light and fluffy, scraping the sides occasionally. Then, add the eggs one at a time, making sure to beat well after each addition.
  • Gently fold in the almond meal, then mix in half of the flour and half of the milk until fully incorporated. Use a wooden spoon for a smooth mix. Add the rest of the flour and milk, repeating the process for a perfect blend.
  • Layer the apple slices in a visually appealing manner on the base of the pan. Pour the mixture over the apples, ensuring a smooth surface. Bake in the oven for 30-35 minutes or until a skewer comes out clean. Allow to cool in the pan for 10 minutes before transferring to a serving plate. Serve warm with custard.
