Indulgent German sheet pan apple cake with layers of pastry, applesauce, and almond streusel.
Ingredients:
  • 0.75 cup white sugar
  • 2 tablespoons white sugar
  • 0.25 cup unsalted butter
  • 2 teaspoons vanilla sugar
  • 5 eggs
  • 0.5 lemon, zested and juiced
  • 2.75 cups all-purpose flour
  • 3 teaspoons baking powder
  • 2 pounds apples - peeled, cored, and thinly sliced
  • 3 teaspoons cinnamon sugar
  • 2.5 cups applesauce
  • 1 cup all-purpose flour
  • 2 tablespoons all-purpose flour
  • 0.5 cup unsalted butter, cut into cubes
  • 0.5 cup white sugar
  • 1 cup almond meal
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and elegantly line a rimmed baking sheet with parchment paper.
  • In a large bowl, cream together 3/4 cup plus 2 tablespoons of sugar, 1/4 cup of butter, and 2 teaspoons of vanilla sugar using an electric mixer until smooth. Gradually add eggs one at a time, ensuring each is well incorporated before adding the next, and mix in lemon zest with the final egg.
  • Sift together 2 3/4 cups of flour and baking powder. Add to the butter mixture and beat into batter on low speed using an electric mixer.
  • Mix together apple slices, lemon juice, and cinnamon sugar in a bowl, then gently fold into the batter. Spread the batter onto the prepared baking sheet and top with applesauce, spreading it out evenly.
  • Mix 1 cup plus 2 tablespoons flour, 1/2 cup cubed butter, 1/2 cup plus 2 tablespoons sugar, almond meal, and 2 teaspoons vanilla sugar to make the streusel. Spread the streusel over the applesauce.
  • Bake in the oven until the streusel is golden brown and the cake is firm, approximately 40 minutes.
