Moist butter coffee cake with cinnamon swirl and generous streusel topping for a perfect mix of flavor and texture.
Ingredients:
  • 0.75 cup brown sugar
  • 0.333 cup all-purpose flour
  • 1.5 teaspoons ground cinnamon
  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • 0.25 teaspoon kosher salt
  • 0.5 cup unsalted butter, softened
  • 3.5 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 3 large eggs
  • 0.75 cup milk
  • 2 teaspoons vanilla extract
Instructions:
  • Preheat the oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  • Combine brown sugar, flour, and cinnamon in a small bowl, mixing until fully incorporated; set aside.
  • Create the streusel topping by mixing brown sugar, flour, cinnamon, and salt in a small bowl. Stir in the butter with a fork until the mixture is crumbly; then set it aside.
  • Combine flour, baking powder, and salt in a medium bowl and whisk together to make the cake mixture.
  • In a stand mixer with the paddle attachment, cream sugar and butter until fluffy for about 3 minutes. Scrape the sides, then mix in eggs on low speed until well combined. Slowly add flour mixture and milk, then incorporate sour cream and vanilla, and beat for 30 seconds.
  • Spread half of the batter in the baking dish. Sprinkle the cinnamon layer, then pour the rest of the batter. Evenly spread the streusel topping on top, gently pressing for adhesion.
  • Bake in the preheated oven for 40-50 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely for about 30 minutes before serving.
