German Apple Cake

Moist apple cake with cinnamon, fresh apples, and a touch of powdered sugar.
Ingredients:
  • 1 cup vegetable oil
  • 2 eggs
  • 2 cups white sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 4 cups apples - peeled, cored and diced
Instructions:
  • Preheat your oven to 350°F (175°C) and prepare a 9x13-inch cake pan by greasing and flouring it.
  • Use an electric mixer to whip together oil and eggs until creamy in a mixing bowl. Mix in sugar and vanilla until well combined.
  • In a bowl, combine flour, cinnamon, baking soda, and salt. Gradually mix in the flour mixture with the egg mixture until well combined to form a thick batter. Gently fold in the apples with a wooden spoon and spread the batter into the pan.
  • Bake the cake in the oven until a toothpick inserted in the center comes out clean, for approximately 45 minutes. Allow the cake to cool on a wire rack.
