Apple cake with nuts, raisins, and warm caramel topping. Adjust oven temperature for glass dish.
Ingredients:
  • 2 cups apple - peeled, cored, and chopped
  • 1 egg
  • 1 teaspoon baking soda
  • 1.5 teaspoons ground cinnamon
  • 0.75 cup chopped walnuts
  • 0.75 cup raisins
  • 0.5 cup brown sugar
  • 0.5 cup white sugar
  • 2 tablespoons all-purpose flour
  • 1 cup water
  • 0.5 cup chopped walnuts
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), then grease and flour an 8-inch square pan. In a large bowl, combine apples with sugar and allow it to sit until the sugar completely dissolves, around 8 minutes. Enjoy the sweet anticipation!
  • Combine the eggs and vanilla with the apple mixture. In a separate bowl, sift together the flour, baking soda, and cinnamon, then mix it into the apple mixture. Gently fold in the nuts and raisins. Transfer the batter into the prepared pan.
  • After baking in the preheated oven for 40 to 45 minutes, or until a toothpick inserted in the center comes out clean, pour the topping over the hot cake.
  • To make the topping, in a saucepan over medium heat, combine brown sugar, white sugar, flour, and water. Stir continuously until the mixture boils and thickens. Remove from heat and add butter, vanilla, walnuts, and raisins. Stir until butter melts, then pour over the cake.
