Delicious German apple pancake bursting with apple, cinnamon, and nutmeg flavors - ideal for a fancy brunch!
Ingredients:
  • 4 eggs
  • 0.5 cup unbleached all-purpose flour
  • 1 tablespoon sugar
  • 0.5 teaspoon baking powder
  • 1 pinch salt
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, melted
  • 0.5 teaspoon ground nutmeg
  • 0.25 cup unsalted butter
  • 0.5 cup white sugar, divided
  • 0.5 teaspoon ground cinnamon
  • 1 large tart apple - peeled, cored and sliced
Instructions:
  • In a large bowl, mix together eggs, flour, 1 tablespoon sugar, baking powder, and salt. Gradually stir in milk while adding vanilla, melted butter, and 1/2 teaspoon nutmeg. Allow the batter to rest for 30 minutes or overnight.
  • Preheat the oven to a toasty 425 degrees F (220 degrees C).
  • In a 10-inch oven-proof skillet, melt butter and brush it up the sides. Mix 1/4 cup sugar, cinnamon, and 1/2 teaspoon nutmeg in a small bowl; sprinkle it over the butter. Arrange apple slices in the skillet and sprinkle the remaining 1/4 cup sugar over them. Heat on medium-high until bubbling, then pour batter over the apples.
  • Bake in a preheated oven for 15 minutes, then lower the heat to 375 degrees F (190 degrees C) and bake for an additional 10 minutes. Transfer pancake to a serving platter and cut into wedges.
