German Apple-Onion Soup

Make a luxurious clear soup with top-notch ingredients, omitting alcohol if desired. Quality is key here - no shortcuts allowed!
Ingredients:
  • 2 pounds onions, halved and thinly sliced
  • 0.25 cup butter
  • 1 (49.5 fluid ounce) can chicken broth
  • 1 (14 ounce) can beef consomme
  • 1 (12 fluid ounce) can frozen apple juice concentrate, thawed
  • 2 cups apple juice
  • 0.25 cup applejack brandy or Calvados
  • 1 pinch white pepper, or to taste
  • 1 Granny Smith apple - peeled, cored and thinly sliced
Instructions:
  • Reserve 1/2 cup of onions for garnish. In a large pot over medium heat, melt butter. Add onions and cook until softened and translucent (not browned), about 10 minutes. Pour in chicken broth, beef consomme, apple juice concentrate, apple juice, and applejack liquor. Simmer over medium-high heat, season with white pepper, and reduce heat to medium-low. Cover and simmer for 1 hour.
  • Sprinkle some of the reserved raw onions at the bottom of each soup bowl. Pour the soup into the bowls and garnish with a few slices of apple before serving.
