Oktoberfest-inspired dish with spaetzle, sausage, bacon-infused sauerkraut with apples and onions.
Ingredients:
  • 1.3333333730698 cups all-purpose flour
  • 1 teaspoon salt
  • 0.33333334326744 cup water
  • 1 teaspoon vegetable oil
  • 2 slices bacon, diced
  • 0.5 large onion, chopped
  • 2 tablespoons butter
  • 1 small Gala apple, cored and chopped
  • 2 tablespoons brown sugar
  • 1 (16 ounce) package sauerkraut
  • 1 (16 ounce) package kielbasa sausage, cut into 2-inch pieces
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a metal colander.
  • In a bowl, combine the flour and salt with a whisk. In a separate bowl, mix the eggs and water, then pour into the flour mixture. Stir everything together until a dough forms.
  • Boil a pot of water. Oil a colander, then place spaetzle dough in it, setting it over the pot of boiling water. Push the dough into the water through the colander holes using a spatula. Stir and boil the spaetzle until they float to the top, about 5 minutes. Remove and place them in a 9x9-inch baking dish without greasing it.
  • Cook bacon in a skillet over medium heat until crisp, stirring often, about 8 minutes. Set aside bacon, keeping drippings in pan. Sauté onion in the same pan until browned, about 10 minutes.
  • Melt butter in a large skillet over medium heat until foamy. Add apple and brown sugar, cook until apple is soft, about 5 minutes. Stir in bacon, onions, and sauerkraut. Cook, stirring often, until flavors blend, about 5 minutes. Pour mixture over spaetzle in a 9x9-inch baking dish.
  • Microwave the kielbasa pieces in a microwave-safe dish until hot and no longer pink, about 2-3 minutes. Then transfer to the baking dish.
  • Bake until bubbly, approximately 15 minutes in a preheated oven.
