German spaetzle: delicate little noodles shaped like sparrows. Serve as a side dish with butter, sauce, or gravy. Use a spaetzle maker for convenience.
Ingredients:
  • 2 large eggs, beaten
  • 1/4 cup milk or water
  • 1 cup all-purpose flour*
  • 1 tablespoon butter or margarine
Instructions:
  • In a 4-quart Dutch oven, bring water to a boil. In a medium bowl, whisk together eggs, milk, flour, salt, and pepper until a thick batter forms.
  • Push tablespoons of the batter through a colander with 1/4-inch holes or a spaetzle maker into boiling water. Stir occasionally. Boil for 2 to 5 minutes until spaetzle float to the surface and are tender. Drain and toss with butter.
